Now I'm posting my daughter's favorite meal. Very easy and delicious. Even better than take-out!
Beef & Broccoli Stir-Fry
½ pound boneless tender beef steak 1 pound fresh broccoli
(sirloin, rib eye or top loin) 1 ¼ cups water
1 Tablespoon cornstarch 4 teaspoons
cornstarch
4 Tablespoons soy sauce, divided 3 Tablespoons vegetable oil,
divided
1 teaspoon sugar 1 teaspoon onion
powder
1 teaspoon minced fresh ginger root Hot cooked rice
1 clove garlic, minced
Cut beef across the grain into thin
slices. Combine 1 Tablespoon each cornstarch
and soy sauce with sugar, ginger, onion powder and garlic in a small bowl; stir
in beef. Let stand 15 minutes.
Meanwhile, remove flowerets from broccoli;
cut in half lengthwise. Peel stalks; cut
crosswise into 1/8-inch slices. Combine
water, 4 teaspoons cornstarch and remaining 3 Tablespoons soy sauce; set
aside.
Heat 1 Tablespoon oil in hot wok or large
skillet over high heat. Add beef and
stir-fry 1 minute; remove. Heat
remaining 2 Tablespoons oil in the same pan.
Add broccoli; stir-fry 4 minutes.
Stir in beef and soy sauce mixture.
Cook and stir until mixture boils and thickens. Serve immediately over rice.
